I don’t know about you, but I find lunch the most complicated meal of the day. I really should take the time to make it, but invariably I lack motivation and inspiration and, as a result, end up grabbing something (usually not particularly nutritious or energy boosting) from the nearest shop.
So, my question is this…
What is your go-to weekday lunch?
