This week we’ll dive into one of India’s best known dishes: Butter Chicken. The dish was developed “by chance” when the founders of Moti Mahal restaurant in Delhi mixed some leftovers in 1947.
In its purest form, it is yogurt-and-spice-marinated chicken dressed in a velvety red bath comprising butter, onions, ginger and tomatoes scented with garam masala, cumin and turmeric. Let’s get to it and cook up a delicious Butter Chicken of your own.
